Soft Pretzel Recipe

This soft pretzel recipe is so good – and while we’re currently not able to eat it (we’re participating in the Whole 30 challenge and are almost done!!) I have been sorting through all my recipes that I am looking forward to making this Fall … and soft pretzel bites are one of them! (I am also looking forward to making Overnight Ciabatta Bread – very easy and so delicious! Pretty sure this breaks all the rules even thinking about what foods I’ll eat once the Whole 30 is over…)
This soft pretzel recipe is delicious and easily adapted to tastes – top with sea salt, cinnamon sugar, or whatever else your heart desires! You could go the extra mile and provide spicy mustard, melted butter, or cream cheese icing to dip these little bites of yumminess in.
Soft Pretzel Recipe
1 1/2 cups warm (110 to 115 degrees F) water
1 tablespoon sugar
1 1/2 teaspoons salt
1 package (2 1/4 tsp) active dry yeast
4 1/2 cups all-purpose flour
2 TBSP butter, melted
Coconut oil, for pan (or your favorite oil)
10 cups water
2/3 cup baking soda
1 large egg yolk, beaten (or more, I tend to need more egg yolk!)
Coarse Sea Salt
Combine the water, sugar and salt in a bowl and add the yeast on top. Let sit until mixture begins to foam (about 5 minutes).
Add flour and butter and mix on low speed until well combined and then increase to medium speed until the dough is smooth, about 5 minutes.
Remove the dough from bowl momentarily. Clean the bowl, lightly oil the sides of it, and place the dough back in the bowl. Cover and leave in a warm place until doubled in size (about 50 minutes). (I like to leave mine by the dryer, which also has a window right near it.)
Pour the 10 cups of water and the baking soda into a large saucepan and bring to a rolling boil.
Preheat oven to 450 F. Line 2 pans with parchment paper and lightly brush with coconut oil. Set aside.
Using a slightly oiled and/or floured surface roll your dough into a long rope. Cut the dough into 1 inch pieces (kitchen scissors are handiest!) Roll into balls {pretzel bites!}
One by one, place the pretzel bites into the boiling water for 30 seconds and place on the prepared baking sheet. Brush the top of each pretzel bite with the beaten egg yolk and sprinkle with coarse sea salt {or cinnamon sugar, or whatever else you concoct!}
Bake for about 12 minutes – they will be a beautiful golden brown color.
They are super hot right out of the oven. But super yum! Serve alone or with a special dipping sauce.
