I wanted our soup week to go out with a bang – after six very different types of soup the kids still weren’t thrilled with any of them. And I really wanted to make a soup that they would love. I made up this pizza soup recipe with hopes that it would be the soup – and it was! Paul was late getting in for dinner and the boys kept walking by, enjoying the delicious smells and commenting on it. I let them each taste a bit of the pizza soup and they begged me to let them eat some more before Paul got home. It was the greatest satisfaction to just watch them beg for more soup.
This pizza soup recipe is dairy heavy. Maybe too heavy. But it is so good. Like, so, so good.
We are gluten free so rather than fuss with what I should use as a “crust” I quickly settled on black beans. The texture was perfect. Almost any bean would be so if you have a favorite bean switch out the black beans.
We love black olives in this house so it was a natural choice for me to top our pizza soup recipe with it – and really, it was just right. I wouldn’t add anything else. But I know black olives aren’t everyone’s thing … so have fun with it and add your own favorites to the top of the soup bowls.
