Lemon Curd

We were suppose to make lemon curd to give away as part of our focus on encouraging others this month – but instead we made lemon curd and ate it all ourselves!! {Well, we did have someone over for a special breakfast on Saturday morning and shared some with him!!}

Lemon curd is delicious and sickeningly sweet and wonderful every once in a great while. It is really easy to make and just fabulous on freshly made scones {which is how we ate it Saturday morning}. We will be making jars of this colorful spread to encourage others and let them know we’re thinking of them later on this week.

How to Make Lemon Curd

Ingredients

  • 3 eggs
  • 1 cup sugar
  • 1/2 cup fresh lemon juice {about 3 lemons}
  • 1/4 cup butter, melted
  • 1 tablespoon grated lemon peel

Directions

In the top of a double boiler (or, a smaller pot sitting inside a bigger one that has boiling water in it) beat the eggs and sugar with a hand mixer. Stir in the lemon juice, melted butter and the lemon peel. Cook over simmering water for 15 minutes or until thickened. Stir to keep from sticking to the bottom of the pot. Let cool and refrigerate.

Both boys enjoyed helping make the lemon curd – the poured ingredients, cracked eggs and stirred the pot. And of course taste tested the lemon curd once complete!
