Grain Free Rolls & Smoked Coconut Bacon

Last month I made these grain free rolls and they were spectacular! They were hard to make look like a perfect roll, but we didn’t care that they didn’t look perfect – they tasted great and that’s what mattered!!
{We were doing the Whole 30 Challenge, and broke our pact with the 1/2 tsp of honey in these rolls!}
I followed the tip in the recipe to make them thinner rolls, as they are a bit dense.
I made my own almond flour following the steps I shared earlier.
The rolls would work as hamburger rolls, but we used them for BLT’s … only with homemade smoked coconut bacon. {Recipe from The Chubby Vegetarian}
My brother found the recipe and, knowing our enjoyment for odd recipes, sent it my way.
The smoked coconut bacon was super fun to try. It really wasn’t even close to being comparable to real bacon. In fact while Judah was eating it, completely unaware of how it had been made, he said “This bacon tastes like coconut!”
While it wasn’t the most satisfying as a substitute on BLT’s, it has been perfect as a salad topping!
