GF Sour Dough Pancake Recipe

gluten-free-sour-dough-pancakes-4We gave up gluten over a year ago, but we have never lost our love of bready things – primarily breakfast bready things. We have been on the lookout for a satisfying gluten free pancake recipe that would satisfy and while we have enjoyed many recipes over the months we hadn’t found the recipe. Ya know, the one that makes Saturday morning breakfast worth getting up for. The one that will get passed on from generation to generation {kidding}. The one that needs to get put on the blog so I can stop looking at scraps of paper Saturday morning.

This recipe was a collision of several pancake recipes and ideas on what makes the best pancake recipe. So, I don’t know, maybe you could call this the best of the best in pancake recipes? We definitely love it.

It’s a sourdough recipe, so you’ll need your own starter – if you’re local and want some sourdough starter I would be happy to pass some on!

gluten-free-sour-dough-pancakesJust a little divergent about my sourdough – I keep a sourdough running – I have had a love hate relationship with it. I originally started a gluten free sourdough and it was just too expensive to keep running, so I killed it off.

Then a friend told me she switched to a sourdough using regular flour, but incorporated it into her otherwise gluten free baking. So I took some of her starter and tested it out on our tummies – and we have been fine. So my sourdough starter is not gluten free, but the flours I use in my baking are gluten free.

I am not recommending this, just sharing my experience and what has worked for us. 
gluten-free-sour-dough-pancakes-1Back to the pancakes. In reading through a variety of recipes over the years I have picked up several tips that others have recommend for the “best” pancake recipe – these are the ones I found helpful and use;

Separate the egg and beat the yolk and the oil (melted butter, coconut oil, etc.) together in a bowl before adding to the other wet ingredients.

Use full fat cream in place of milk.

Don’t over stir the pancake batter.

Let the skillet get hot before adding any batter. Test it by dropping a dribble of water on it, if it sizzles it is ready. (always add a bit of oil before cooking the pancakes.)

Use a 1/4 cup measuring cup to scoop the batter and pour neatly on the hot skillet. Flip once the edges start to bubble.gluten-free-sour-dough-pancakes-2

    The Night Before
  • 1 cup sourdough
  • 1 cup gluten free flour (I use brown rice flour)
  • 2/3 cup water
  • The Morning Of
  • 1 egg, separated
  • 3 TBS coconut oil
  • 1 TBS maple syrup
  • 1 TBS cream
  • 1 tsp xanthan gum
  • 1 tsp baking soda
  • 1/4 tsp salt


    The Night Before
  1. Mix these three ingredients together and cover with a tea towel. Leave in a warm place overnight.
  2. The Morning Of
  3. Beat your egg yolk and coconut oil together - I use an electric handheld frother.
  4. Combine remaining ingredients, including the egg white, and the egg yolk and coconut oil mixture - again, I use the handheld frother to ensure the dry ingredients blend well.
  5. Add the sourdough mixture and stir until combined.
  6. Heat skillet over medium heat. Brush with oil.
  7. Using a 1/4 cup measure ladle the pancake batter into the skillet. Flip when the edges begin to bubble.

We enjoy these pancakes each Saturday morning, and this week decided to take them outside for pictures and a picnic – until the ants decided to join our little picnic – they came in full force and were biting us, so we moved indoors soon after.
