Avocado Bruschetta Recipe
1 large, ripe tomato, diced
2 scallions, finely sliced
4 oz fresh mozzarella cheese, diced
1/2 ripe avocado, diced
1/2 TBSP balsamic vinegar
1 TBSP extra virgin olive oil {Err on the side of less}
salt and pepper to taste
4 slices bread, sliced and toasted {Ciabatta works well}
Mix the first 7 ingredients in a bowl, toss gently.
Spoon mixture on top of toasted bread. Serve and enjoy!
This Avocado Bruschetta Recipe is delicious! We’ve had it two days in a row, and will have it again as soon as I buy some more avocados! {And figure out a way to eat it sans bread!}
